Semolina Pasta was born when I picked up an old 'La Parmiagiana' pasta extrusion machine, when a local deli closed its doors in 2004.
I began producing pasta to sell at the weekly 'City Food and Garden Market' in St. George’s market, Belfast. It was an instant success, as no-one was producing truly fresh pasta anywhere in N. Ireland, I accompanied the pasta with a range of great sauces, cheeses and a few other basics for pasta cooking. I also decided to cook some of the pasta there in the market so that customers have a bowl of pasta for lunch. This complemented the other range of food stalls at the market perfectly, there are stalls offering food from all parts of the world, using as much local produce as possible.
